Publicans from across Cornwall and Devon will be learning how to cook up a profit at a free training day being held on January 7, 2004.
The one-day ‘Food For Profit’ event takes place at the St Mellion Golf & Country Club and has been organised by the British Institute of Innkeeping’s (BII) South West branch with the support of St Austell Brewery.
Keith De Bruin CMBII, chairman of the BII’s South West region, said:"This promises to be a great event – and should offer some new and exciting ideas on how to attract new food-related trade."
Tania Hall from St Austell Brewery’s William Cookworthy Training Centre said the event would feature cookery presentations and demonstrations from four top local chefs. There will also be several guest speakers and a mini trade fair that will include wine and beer tasting hosted by local breweries.
She said:"We held a similar event last year that was extremely popular and we’re expecting this one to be just as successful. The event offers an ideal post-Christmas day off for hard-working licensees – as well as an opportunity to pick up useful tips on how best to make a profit from food.
"We’ll be working our way through the whole menu in stages, beginning with a demonstration on starters, followed by ideas on how to improve main dishes and a session on desserts – as well as practical advice on vegetarian food and the launch of a recipe book competition."
The event is also being supported by St Austell College and Taste of the West, a company set up to support the economic development of the region’s food and drink industry.
One of the speakers will be Carol Trewin – manager of Taste of the West, Cornwall – will explain to guests how the use of local produce can add value by enhancing the regional distinctiveness of the food on offer to customers.
James Staughan, managing director of St Austell Brewery and Chairman of Cornwall Tourism will then highlight the links between food and tourism. Finally, the BII’s licensed retail adviser, Phil Dixon CMBII, will give a crucial update on licensing law reform.
